Zach Allen Hired as Executive Chef

As of June 8, Chad Colby has renounced his post as Executive Chef at chi SPACCA to explore new opportunities. B&B Hospitality Group veteran Zach Allen has already assumed the top spot at chi SPACCA and will be overseeing the kitchen for the foreseeable future. 

Allen has worked with Mario Batali since 1999 when he was hired at Lupa, under the direction of Mark Ladner. Allen has since been responsible for overseeing the kitchens at B&B’s restaurants in Las Vegas, Singapore, and Hong Kong. A fabled meat maven, Allen is responsible for having built the salumi program at B&B’s OTTO Enoteca e Pizzeria in New York, the first restaurant in New York to have a Cured Meats HACCP plan approved by the Health Department. Allen will inherit Colby’s famed meat locker. 

Open daily for dinner, chi SPACCA is Mario Batali, Joe Bastianich and Nancy Silverton’s “ode to meat, beautiful meat.” The restaurant was named one of the country’s best new restaurants by GQ, Esquire, Bon Appétit, and Time Out LA as well as one of Los Angeles  Magazine’s 75 “best restaurants” in LA.
